I chose the Biscotti because I had planned to make Biscotti over the holidays.
The recipe is listed on page 302.
Ingredients
1 1/4 cups all-purpose flour
1 1/4 cups whole-wheat pastry flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup sugar
2 large eggs
1/4 cup olive oil
1 teaspoon grated orange zest
1 teaspoon vanilla extract
1/2 cup dried tart cherries, finely chopped
1/2 cup almonds, finely chopped
2 ounces semisweet chocolate, finely chopped (scant 1/2 cup)
Directions
Preheat oven to 350 degrees F. In a medium bowl whisk together the all-purpose and whole-wheat flours, the baking powder and salt. In a large bowl beat together the sugar, eggs, oil, orange zest and vanilla extract until well combined. In batches add the dry ingredients until the mixture forms a dough. Beat in the cherries, almonds and chocolate.
Transfer the dough to a floured work surface and knead several times. Shape into a log about 10 inches long and 3 inches wide. Transfer to a parchment lined baking sheet and bake for 25 minutes. Transfer to a wire rack and let cool for 15 minutes. With a serrated knife, cut 1/2-inch diagonal slices. Arrange cut side down on the baking sheet and bake for 10 minutes. Turn the cookies over and bake the biscotti until golden, 5 to 10 minutes longer. Transfer to a wire rack to cool.
The only thing I did to alter the recipe was to cut down on the orange zest. I was just overwhelmed at the amount of baking I was doing at the time and probably only got 1/2 tsp in there.
I found the biscotti hard to shape and even harder to slice. But I went ahead and served them on Christmas Eve. The result was that there was not a biscotti to be found for breakfast the next morning. Everyone enjoyed it but I should put a disclaimer out that most of my family has been on Weight Watchers for sometime now and cooks with wheat. There is a difference that you can taste in the biscotti with the amount of wheat flour used. This was one of those recipes that you would need to be used to baking with healthier ingredients or it would not be enjoyable.
I probably won't make the recipe again because of the amount of calories in porportion to the taste of the biscotti. I am thinking of trying this one though. Go see what everyone else baked up over at CEiMB.

I thought this was a great pick, Leanne! They definitely had a rustic taste, but I really liked them. I think they are great dipped in coffee or hot chocolate. For me, they satisfy that cookie urge while being much healthier than a typical cookie (with the olive oil and the wheat flour). Granted, the calories are still pretty high. Still, I'm glad I made these and might well make them again. Yours look great! Happy New Year!
